The importance of yeast in beer making has never been given the importance it deserved as the recent study revealed the ingredient responsible for its yummy taste. The research was published in the journal Cell Reports.
Kevin Verstrepan who is the lead researcher from University of Leuven reported that, “The importance of yeast in beer brewing has long been underestimated. But recent research shows that the choice of a particular yeast strain or variety explains differences in taste between different beers and wines,”
Belgian researchers also found that the chemicals produced by beer yeast exhibits the same aroma like fruits which plays a vital role in attracting the flies which
transfer the yeast cells to new forms.
Verstrepen further told that, “In fact, yeasts may even be responsible for much of the “terrier,” the connection between a particular growing area and wine flavor, which previously often was attributed to differences in the soil”.
Yeast has been used by humans for thousands of years for making bread, beer and wine. It converts sugars into alcohols and carbon dioxide. Furthermore it also releases such aromatic compounds which give the taste quality and flavor to the beer.
Researchers are still trying to find out the reasons as to why yeast produces these aromatic compounds. It is still a mystery to be solved later.
Moreover these aromatic compounds are highly appealing to fruit flies which help it in taking the non-motile cells to new food sources.
